Located at the heart of Pays Cathare, our estate is seated on the terroir of DURBAN, surrounded by a rocky barrier culminating at 600m high, thereby benefiting from a micro-climate: a very long mild period compensates for the summer dryness, which offers a beautiful maturing process.
The vine is planted on a variety of small hillside areas, from which the vintner endeavors to produce the finest wines.
The harvest is naturally healthy. However, DOMAINE DE LA PEYROUSE now goes further by having been worthy of the organic certification since 2013.
The harvest runs between September and October, depending on the varietals, terroirs and types of wines defined. The grapes are cut at the moment of their best maturation stage, and then go through the vinification process in a traditional manner. Indeed, it is crucial for us to preserve our ancestral traditions, while adapting to the latest vinification techniques: thanks to a total destemming and a constant control of the fermentation temperatures, macerations can take quite a while in order to extract all the best tannins and aromatic range of the different varietals.
The wines thus obtained, featuring a deep red color, present a beautiful tannic structure which, when associated to the specific aromas of each varietal, can beautifully age so you will be proud to have them on your table.
